As mentioned in a post from December, I decided to start a monthly post of what’s going on in my life. Nothing too serious, just little updates. Some examples I used for December were: runn-ing less than Iād like to, appreciat-ing the extra family time, freez-ing in the cold December weather (that finally arrived), worry-ing about our holiday budget, enjoy-ing Christmas goodies. Now for January…
– Read-ing whenever I have down time (I’m on track with my goal so far! 5 Books already)
– Eat-ing a handful of new recipes every week (Including: Protein Packed Muffins, Quinoa Cornbread, Whipped Cauliflower,Ā Health-ier Tomato Soup and Skinny Chocolate Cupcakes-pictured below)
– Drink-ing more water than I used to (Tip: Add mint, cucumber, and lemon and you’re in for a treat!)
– Sleep-ing less than six hours a night (I need more sleep!)
– Watch-ing these shows (and falling in love with all of the characters)
– Creat-ing DIY projects for around the home (and one special gift for Valentines Day…shh)
-Finish-ing up my teaching license (less than 2 months and I will have it!)

What have you been up to this month? I didn’t realize how close we were to February! Less than one week š
New Girl is so funny, haha schmidt is the best!
I need cupcakes in my life. & I love the photo collage.
I wanna try those cupcakes!!! They look amazing!
And by the way, those cupcakes look amazing! Great job Di!
Quinoa cornbread! Yum!
Yay for reading and baking!! I can’t wait for Feb, it’s my birthday month!! š
Haha. I love New Girl and Mindy Project! We usually watch both of those sometime during the middle of the week when we really need a good laugh.
I need to watch New Girl, I know I would like it, but right now I’m sucked into Lost and I can’t watch any other shows until I finish it. haha. Can’t wait to see what you make for Valentine’s day! It’s so close!
That is so exciting & awesome that you almost have your teaching license. Those 2 months will fly by š
I’m hoping they fly by š It has been a long time coming – looking forward to finally being finished with it!
LOVE new girl! And those cupcakes look super tasty š
It really is the best show! SO funny!
How do you like working on your teaching license? I’m thinking about applying for Teaching for America, just because Freelance work is so…sporadic.
The program I’m in is intense but do-able. Unfortunately, I’m not sure that teaching is exactly what I want to do anymore. My undergrad degree is in English (Pre-Education emphasis) but I’m not sure that it’s the path for me now. My husband is a high school teacher and -on top of working eight hour days- he has about three hours of grading almost every night. I’m just not sure that will work for me in the long run (that is, once we start a family!) I’ve heard GREAT things about Teach for America but the biggest thing I’m told is that you have to have a passion for the kids because it’s tough work for low pay. Definitely look into it and if you have a passion for teaching! This world needs more great teachers who, not only love what they do, but love the kids š
I think we’re in a similar position. I got my B.A. in English, with a minor in journalism. All I’ve ever really wanted to do is write books. I chose the journalism minor because I thought a job where I could write all the time would be a great way to make money while I worked on novels. The catch? I hate hard news and the magazine business is dying. I got some great internships, but non lead to real gigs. I’m doing freelance and consulting now and I’m hoping to monetize my blog, but until then, I really need to find another means of income. It’s very frustrating. I’m on the fence about teaching. I taught creative writing to elementary kids one semester and it was terrifying. So yeah, not sure if it’s the right career path for me either.
Those chocolate cupcakes look delicious! š
They were! Not the best I’ve had but for the ingredients – yes! š
