Carrot Cake Oats.

Anyone that knows me can testify to my enormous sweet tooth. When it comes to dessert; I have little no control. As stated in previous posts, I’m trying to live a healthier lifestyle which means dessert isn’t an every day occasion…but it can be!

I follow so many blogs – Chocolate Covered Katie, Iowa Girl Eats, Dashing Dish– to name a few (these three in particular include healthier versions of ‘not so healthy’ treats.)

Since I limit my sugar intake during the week, I’ve been coming up with new ideas to supplement gut-busting treats. One that I’ve been making A TON of is actually a breakfast food – Carrot Cake Oats.

Wholesome oats for breakfast + Carrots + Vanilla + Almond Milk + Coconut + Light Mapple Syrup = a delicious way to start the day.

Carrot Cake Oatmeal
about 1/4 cup of grated carrots, steamed in microwave beforehand
1/3 cup oats
1/4 cup almond milk (or milk of choice)
1/2 cup water
cinnamon and nutmeg (to taste)
2 tbsp shredded coconut
light mapple syrup (to taste)

Combine oats, water, and milk on stove and begin to heat. Once oats start to cook, add in carrots and spices. When it’s done cooking, pour into bowl and add coconut (or even walknuts and raisins.)
