Cilantro Chickpea Burgers.

I have been making these ‘burgers’ for dinner at least once a week. Marty and I both LOVE them. I know, I know, they look strange –but trust me: they are delicious! The recipe is adapted from one of my favorite blogs: Made in Sonoma.

Chickpea Cilantro Burgers
1 (15oz) can chickpeas, drained & rinsed
1 (4oz) can diced green chiles
2/3 cup cilantro
2/3 cup panko bread crumbs
1 large egg, lightly beaten
2 sandwich thins
spinach (a handful)
red onion (a handful)
condiments of your choice (We use Sriracha!)
In a food processor, pulse chickpeas, chiles, and cilantro until finely chopped. Transfer to a mixing bowl and stir in bread crumbs, egg, and salt & pepper to taste. Form 4 patties. Pop sandwich thins in the toaster. Heat grill pan over medium heat. Cook burgers for about 3-4 minutes on each side. Top with your favorite condiments and burger toppings. YUM!
