I have to come clean about something: I have an intense addiction to peanut butter. No, seriously. I can’t seem to get enough. I can honestly put it on anything and be satisfied – Thai foods, quinoa, fruits, celery, carrots, cereal, oats – the list goes on my friend.
In trying to come up with some new breakfast ideas (besides my everyday bowl of oatmeal), I decided to make Baked Banana Oatmeal Bites. I know I didn’t stray far from my traditional breakfast oats; however, these little guys put a new spin on morning oatmeal (and are just delicious!)
Topped with melted peanut butter and banana, it made the perfect little meal. I ate
one two three.
Baked Banana Oatmeal Bites
(adapted from fitfoodiefinds)
1 cup quick cooking oats
2 large egg whites
1/2 TSP baking powder
1 cup almond milk
1 large banana
In a small bowl, mix together oats, egg white, baking powder, and vanilla almond milk. Set aside. Layer 2 muffin tins with sliced banana. Pour oat mixture on top. Bake at 375 for 15 minutes. You can add optional toppings such as: sliced strawberries, peanut butter, shredded unsweetened coconut, chopped walnuts, chocolate morsels – be creative!
