Pancake Saturday: Very Vanilla Pancakes.

Happy Saturday Everyone (or should I say Happy Pancake Saturday!) This morning was the first ever Pancake Saturday: a new tradition I’m starting within the Boden household. Despite having to work this morning, the tradition had to begin!

First up – Very Vanilla Pancakes (found on a fellow blogger’s site – My Little Celebration.) This isn’t the last time you’ll hear that name, as it looks as though Dana has several tasty pancake recipes on her site. In the following weeks I fully intend on making her PB&J Oatcakes, Grasshopper Pancakes, Savory Biscuit Pancakes and Coconut Chocolate Chip Pancakes. So many pancakes…so little time.

I digress…

…back to the vanilla pancakes…They were wonderfully fluffy and super easy to make.

Very Vanilla Vegan Pancakes
makes 8-10 pancakes

1 c flour {I used all purpose}
1 TBSP sugar
2 TBSP baking powder {no, not teaspoons}
pinch salt
1 cup light vanilla soy milk {I used Silk}
1 TBSP canola oil
1 TBSP unsweetened applesauce
2 TSP vanilla

Turn griddle to medium heat. Combine dry ingredients in a large bowl. In a separate bowl, combine the wet and then add them to the dry. Stir until just combined and no large lumps remain. Spoon about 1/3 c measurements onto the greased griddle. Carefully flip when bubbles appear on top or the edges look dry, then cook for 1-2 minutes more. Serve with vegan butter and agave nectar or maple syrup.
