What a tasty lunch I had this afternoon; I made an Egg White, Spinach & Avocado Sandwich. I know, I know. I realize that I’ve been sticking to ‘fairly healthy’ food lately, but c’mon! It tastes so good, might as well.
Anyways, I adapted this sandwich from a recipe on the blog Budget Bytes. I have really enjoyed reading this blog. It has some great tips for making affordable, tasty dishes. She even breaks down the recipe costs by ingredient. Love it!
Egg White, Spinach & Avocado Sandwich
2 pieces of toasted, whole grain bread
handful of spinach
3 egg whites
sriracha hot sauce**
a pinch of salt
**This is the most important ingredient: adds an wonderful amount of deliciously spicy flavor.
Toast two pieces of bread on the stove top. Set aside. Next, scramble three egg whites. While eggs are cooking, chop half an avocado into thin strips. Time to assemble. On a plate, place spinach over top of one of the bread pieces and top with the scrambled eggs. Next top the eggs with sriracha hot sauce (this sauce is spicy, add a small amount at first to play with taste). On the other slice of toast, lay strips of avocado. Finally, combine both sides for a delicious afternoon lunch! YUM.
