‘Healthy’ Cupcakes for Two.

I’m always in search of healthier dessert options; some desserts you can modify, others are just low calorie (but usually not as tasty). In the hunt for a low calorie, delicious dessert, I stumbled upon Chocolate Covered Katie – a blog filled with healthy desserts. Katie’s aim: “My aim isn’t for people to say, ‘This is good… for a healthy dessert.’ I want them to say, ‘This is good. Period.'” I love that.

More often than not, I find myself disappointed with so-called ‘delicious low calorie treats’. They are typically filled with artificial sweeteners and, to be honest, don’t taste all that great. In wanting to believe Katie’s aim, I decided to make her recipe: Cupcakes for One.

Wow – these were so tasty! I ended up making two servings (one for Marty too) and it was really quite easy. Prep/bake time is around twenty minutes and then voila; a cupcake is ready on the plate before you. I can’t wait to try more treats from this fun new blog.

Health-ier Cupcake
(serves one)
3TBSP flour
1/16th TSP salt
1TBSP applesauce, oil, pre-melted vegan butter, or a combo
1 TSP plus 1 tsp liquid (milk of choice, or water)
1/4 TSP vanilla extract
1/4 TSP baking powder
2 TSP sprinkles (or more or less, as desired)
Sweetener (as desired)

***For our cupcakes, I topped with a vanilla glaze (powdered sugar, almond milk) and a bit of chocolate icing (because, well, everyone loves a little bit of chocolate icing.)
