peanut butter cup cookies.

So, in my household, it is known that I have become a bit obsessed with reading the Iowa Girl Eats blog. I find reading her blog so enjoyable; she really has great, simple recipes for everyday cooking/baking. I can’t get enough! Anyways, tonight’s recipe is adapted from a recipe on her page: Peanut Butter Cup Cookies. These cookies are so delicious and really easy to make.

In her recipe, she uses cookie butter (as opposed to peanut butter) but I think that either way these babies are a delectable treat.

Peanut Butter Cup Cookies
1/2 cup butter
1/2 cup Peanut Butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/4 cups all purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
Reese’s miniature peanut butter cups

Preheat oven to 375 degrees. Cream together butter, peanut butter, sugars, egg and vanilla until light and creamy. In a separate bowl, sift together flour, baking soda and salt. Add dry ingredients to wet ingredients in 3 batches, mixing until just incorporated before adding the next batch. Place dough on cookie sheet. Bake for 8 minutes exactly. Unwrap peanut butter cups while the cookies bake.Once the cookies have been removed from the oven, immediately push one peanut butter cup into the center of each cookie. Remove from tray to cool and enjoy!
