For the last week or so, I’ve been addicted to reading the blog: Iowa Girl Eats – seriously, I can’t get enough. Anyways, I’ve said before that I’ve wanted to become a better cook and I feel that I’m only going to get better if I practice. Practice. Practice. My practice for this morning was a fun little dish – Fried Eggs in a Bell Pepper Ring. It’s honestly super easy (and really tasty).
What I like about this is that it takes about as long to cook as a regular fried egg.
Fried Eggs in a Bell Pepper Ring
Begin by warming your skillet to medium low. Add bell pepper ring flat in the pan. Allow the bell pepper to cook for a few minutes, then flip. Crack eggs open into your cooking bell pepper rings. (Some whites may leak from under the bottom of your rings. Not to worry. Just press down on your rings with a spatula to minimize spread and help the edges “set”). Allow eggs to cook until desired wellness. Remove eggs from skillet. Top with salsa, cheese, or bacon, if desired. And there you have it – simple, easy, delicious!
