veggie and hummus pitas.

This sandwich earned rave reviews with Marty. It’s super easy and fairly quick (maybe ten minutes) to make.

Veggie and Hummus Pita
-Cucumber
-Basil
-Red Onion
-Hummus (we used Spicy Cilantro)
-PitaSlice cucumber and red onion. Cut pita pocket (you can use one pocket or the entire pita). Spread hummus on the inside of pita. Layer cucumber and red onion within pita. Finely dice basil and sprinkle over top of pita entry. (You can also put 2-3 basil leaves inside for awesome flavor).

Voila! Simple and easy (and delicious)!
