I was trying to come up with something quick for dinner the other night and I created a yummy new dish: Mushroom and Tomatoes over Penne Pasta. I honestly am surprised that it turned out so well but it did indeed. Oh – and for the side: Baked Asparagus with Parmesan (really easy – bake with olive oil and parmesan at 450 degrees for 7 minutes).
Mushroom and Tomatoes over Penne
Tomatoes
Mushrooms
Penne Pasta
Oregano
Parmesan Cheese
Green Onion
Crushed Red Pepper
Olive Oil
Dice tomatoes and mix them with mushrooms in a bowl.In the same bowl, add oregano, green onion, crushed red pepper and 4 tbsp of olive oil (all of this is really to your preference). Mix the bowl well. Serve over penne pasta. Add parmesan cheese if you’d like.
