30 Breakfasts: Banana Oatmeal Breakfast Muffins.

Three recipes down…twenty-seven to go…

For my third breakfast in this challenge I decided to go with ‘Banana Oatmeal Breakfast Muffins’. I couldn’t believe how moist these muffins appeared on the pin; I knew I had to try them out for myself.

Muffins

Banana Oatmeal Breakfast Muffins
2.5 cups old fashioned oats 
1 cup plain low fat Greek yogurt
2 eggs
1/2 cup honey
2 tsp baking powder
1 tsp baking soda
2 TBSP ground flax seed
1 tsp vanilla
2 ripe bananas

Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners. Place the oats in the food processor and pulse for about 10 seconds.  Add remaining ingredients to the food processor. Process until everything is mixed together and oats are smooth. Add in any extras at this point (I added almonds but near the end of the baking process – you could add chocolate chips, walnuts, etc) Divide batter among cupcake liners, and bake for 15-18 minutes (or until toothpick comes out clean.) Let cool on wire rack. DIG IN!

Review: Although I burnt mine a bit on the edges, they still turned out pretty well. I wouldn’t say mine were as good as the original picture (this could be because I’m not the best baker – in fact, I’m a pretty terrible baker!) I also  feel like the original recipe looks much more moist than mine; nonetheless, any combination of banana and oats for breakfast receives a ‘thumbs up’ in my book.

30 Breakfasts: Green Monster Oats.

As I mentioned in this post, I decided to challenge myself to making thirty breakfasts from my Pinterest board: Favorite Meal of the Day. After a crazy hectic week (last week) I realized I’d better get a start on this challenge if I were to keep my word on this challenge. :)

That said, this morning I cooked up a bowl of Green Monster Oats.

For those of you who are new to the term ‘Green Monster’ – don’t run! I promise that a delicious meal is in store for you if you can just look past the color.

When you see that bright green bowl, think, “Vitamin K, Vitamin A, Iron, Calicum, Magnesium!”

There are SO many benefits to eating spinach and what a great way to get a serving or more of vegetables in at breakfast!The original pin (recipe courtesy of Oh She Glows):

Pin 1My Review: This ‘Green Monster’ inspired take on morning oats was just delicious! While I didn’t follow the recipe exactly (I didn’t have Chia seeds so I used 2 egg whites to thicken the oatmeal instead – I also made them in the morning instead of doing ‘overnight’ oats), I assume it was pretty close to the real thing!

Green Monster Oats
1 large handful fresh spinach
1 large ripe banana
1.5 tbsp chia seeds (necessary for thickening – I used 2 egg whites instead!)
1 cup almond milk
1/3 cup regular, rolled oats

In a blender, blend together the spinach, banana, chia seeds (or egg whites), and almond milk until smooth.In a cereal bowl, add the oats and then pour the smoothie on top. Stir well until combined. Add toppings if you wish. I added 1 packet of Truvia sweetener to mine :) Bon Appetit!
